Our History
Our Legacy
A Family Dream, Decades in the Making
Hali'imaile Distilling Company was founded by the LeVecke family, whose passion for crafting premium spirits spans over 50 years. Inspired by their deep connection to Hawai'i and its vibrant culture, the LeVecke brothers dreamed of creating a micro-distillery that would embody the spirit of the islands. Eighteen years ago, this vision became a reality on the slopes of Haleakalā in Makawao, Maui.
The Heart of Maui
Crafted from the Land, Inspired by Aloha
Located in the historic pineapple fields of Maui, our distillery sources Maui Gold® pineapples—renowned for their exceptional sweetness and quality. These pineapples are the foundation of our flagship spirit, PAU Maui Vodka, celebrated for its crisp, clean, and refreshing finish. Our spirits are a testament to the island’s natural beauty and agricultural richness.
Sustainability at Our Core
Preserving Hawai'i for Future Generations
At Hali'imaile Distilling Company, sustainability is not just a practice but a way of life. By utilizing local ingredients and recycling by-products as agricultural feed, we ensure our operations have a positive impact on the land. Our commitment extends beyond our spirits—we aim to preserve Maui's natural resources for generations to come.
A Commitment to Craftsmanship
Authenticity in Every Bottle
Each spirit is handcrafted using cutting-edge glass stills and innovative distillation techniques. This meticulous process ensures unparalleled quality and captures the essence of Hawai'i in every sip. From the botanical richness of FID Street Gin to the caramel warmth of Mahina Premium Rum, our spirits offer a truly unique experience.
